Cochinita Pibil. Perhaps the most famous dish of the peninsular region, consists of preparing a marinade of pork with achiote (a red spice) and then wrapping it in banana leaves and finally baking it in the ground, this cooking technique is known as "Pib" and is of Mayan origin, hence the name of the dish. The stew is accompanied by red onion and habanero chili sauce. You have to try the Cochinita Pibil tacos!

Lime soup. It is one of the oldest dishes, and today it is still very popular because of its splendid combination of spices and citrus. Fish in Tikin Xic. A seafood dish that mixes various ingredients typical of the peninsula; its name comes from the sauce with which the fish is marinated, a sauce with achiote, pepper, cloves, cumin, and salt. This stew has a very simple preparation, the achiote sauce is spread on a whole fish, it is decorated with onion rings and chili, placed on a bed of banana leaves, and then cooked over charcoal. A delicacy of the sea that you must try when you visit Playa del Carmen and Tulum!
