The authentic cooking of this dish is in underground ovens, although nowadays, it is also prepared in conventional gas ovens. Its flavor is sour and somewhat sweet, and the meat is extremely juicy.

 


Ceviche

Tikin xic fish


Tikin Xic fish consists of a fish fillet opened in half, without a spine, and marinated with achiote and sour orange. The traditional cooking is in a wood oven, and when serving it, it is placed on a bed of banana leaves and coconut shells and coated with lager beer. It is accompanied by xcatic chili, red onion and tomato. Without a doubt, it is an aromatic experience!

 


Esquites


Esquite is one of the most popular street foods, although you can also find its gourmet version in a luxury restaurant. Esquite consists of corn kernels served in a glass, accompanied by corn broth, cream, mayonnaise, lemon juice, and cotija cheese. Nowadays, it's common to customize your esquite on the spot, adding extra ingredients and toppings.

 


Marquesitas



For dessert lovers, the marquesita is a classic that cannot be missed. It is similar to a crepe, but with the peculiarity that it is rolled up in the shape of a flute and very crisp. The traditional filling is Edam cheese, also known as "queso de bola." Nowadays, it is common to accompany it with hazelnut cream, strawberries, chocolate, among other ingredients. Its flavor is the perfect balance between sweet and salty.
